Pumpkin & Watercress Soup/ Sopa de Abóbora & Agrião

150g of watercress (Vitacress)
150 de agrião de água (Vitacress)

1 leek
1 alho francês

1 onion
1 cebola

400g of pumpkin in cubes.
400g de abóbora em cubos

1 chayote, peeled and diced.
1 chuchu descascado e em cubos

salto to taste
sal q.b.

200ml of rice cream
200ml pacote de natas de arroz

3 table spoons of olive oil
3 c. sopa de Azeite

Method
Preparação

Peel the onion. Cut the onion and the leek into thin slices.
Descasque a cebola. Corte a cebola e o alho francês em rodelas finas.

Place 3 table spoons of olive oil in a large pan and let the leek and onion braise at a low heat.
Coloque numa panela grande cerca de 3 colheres de sopa de azeite, e deixe a cebola e o alho francês refogar em lume brando.

Add about 800ml of hot water and add the pumpkin cubes and the diced chayote.
Adicione cerca de 800ml de água quente e junte a abóbora e o chuchu cortados em cubos.

Add the sal and allow to cook for about 20 - 30 minutes.
Adicione o sal e deixe cozer durante cerca de 20 - 30 minutos.

Once all the vegetables are cooked turn into a smooth cream with the hand blender.
Uma vez que todos os legumes estejam cozidos passe a varinha magica até obter um creme.

Add the watercress and once the soup stars to boil turn of the heat.
Adicione os agriões e mal comece a ferver desligue.

Allow to cool a little and add the rice cream before serving.
Deixe arrefecer um pouco e adicione as natas de arroz antes de servir.

Trick - Serve with some oven toasted pumpkin seeds with butter and salt.
Trick - Sirva com uma sementes de abóbora torradas no forno com manteiga e sal.
